Fajitas

3-4 chicken Breasts diced
1 sliced onion
1 sliced pepper
1 Garlic clove (or 1 tsp garlic powder)
2-3 Tbls Olive Oil
1/2 tsp chili powder (more if you like it with some kick)
1 tsp onion powder
1 tsp cumin
1 tsp seasoning salt
Salt and Pepper to taste

Heat up the olive oil in a skillet or pan. Once the oil is hot throw the chicken, onions and peppers all in at the same time. Add seasonings right away so they really soak it. Cook on med-high heat until chicken is cooked through and onion and peppers soften. (I like mine a little more soft...)

Usually you serve with corn tortillas*, sour cream, cheese and lettuce. You can just put them on lettuce, or eat plain.

* Secret to making corn tortillas soft and warm. Heat up an old pan on the highest heat you can, when hot cook the tortilla for about 10 seconds on each side until it's soft, or bends easily. sometimes I also cook a little lower heat with a lid on to lock in moisture.
