Curried Shrimp (or chicken)

This is one of my all time favorite recipes! And it has NO dairy, Gluten, eggs, corn or really any other allergen! So enjoy!

1-2 cups shrimp and/or chopped chicken
1 onion cut the way you want, bigger for actual pieces in the sauce is how I do it
3-4 Carrots cut into sticks
1 cup broccoli
1 cup Zuccini
1/2 cup red pepper (optional)
1/2 cup peas
2 T oil
2-3 tsp curry paste - red or green
1 can coconut milk
2 T fish sauce, or 1/2 tsp salt

  • Cook meat, onion, peppers and carrots until they start to get tender, add the broccoli, zuccini and peas.
  • Once everything is cooked through, take out whatever meat and veggies you will need for litte one who may be really upset with you for even thinking of making something as awful as curry. ;) Set aside.
  •  Add the curry paste, coconut milk and fish sauce. (you can also add a tablespoon of sugar if you want, but it really doesn't need it.)
  • Heat through and serve over sticky or jasmine rice. (or just eat plain if you are on the lovely clean out...)
